Eve’s Pudding

The next day we made Eve’s Pudding out of our apples.

Preheat an oven to 180C. First we peeled and  chopped up our apples. Then we creamed 4oz butter and 4oz sugar together. After that we added 2 eggs and finally folded in 4oz self-raising flour, adding 1-2tbsp milk to achieve a dropping consistency.

We left it to the side while we greased the pie dish and ½ filled with the chopped apples adding sugar to sweeten. (ie 2-4tbsp sugar)

Cover with the sponge mixture and put in the oven for 35-40mins. Be careful to cover it with tinfoil if  you feel it is getting over brown.

Leave to  rest for a few minutes then serve with custard.

If you wish to make a big pudding just double the mixture and it will need a little longer in the oven.
